musashi is an amazing Japanese steak house right off the strip. I highly recomend it, get the Kobe beef

Check out the menu though. This is not your average sushi place.

I second this... I eat at Musashi almost every time I go to Vegas.

For a fun, party-type atmosphere with great food, I would pick N9NE at the Palms (try the lobster mashed potatoes) or Stack at the Mirage (make sure you get the hot rocks appetizer and the cheese filled tater tots for a side)

I havent really ate at a good Japanese restaurant in Vegas, but I know Social House at TI was really popular (I heard that it might be closed???)
