I've got myself a AT&T Pay As You Go SIM Card for when I come to Vegas next week (from the UK). When I put the SIM Card in the phone all my email settings, contacts, calendar info etc etc should all stay the same shouldnt they?!!

They should. Unless all your contacts are saved on your original sim card itself.
